Foodie Group for December

The November meeting brought us some delicious frozen treats. We were a small group this week but certainly not lacking in enthusiasm. Alison made a beautiful frozen raspberry yogurt and a Nutella gelato. I made Baileys and then made it into an ice cream. We also shared some delicious dip and Kim brought a baked savour pastry with fig and blue cheese which we washed down with some lovely wine. Was a great night and we went away with some ideas and tips for making our own ice creams, shall definitely be giving my KitchenAid ice cream bowl a work out this summer! Fresh Egg Pasta with a KitchenAid

Fresh egg pasta Serves 6 Preparation time 10 minutes plus resting time Cooking time 3 minutes 200g 00 flour 200g semolina 200g whole egg (Tip using electronic scales weight, 4 eggs then equal weight in 00 flour and Semolina) Place eggs, flour and semolina in the mixer bowl. Attach the flat beater. On speed 2, mix slowly until flour is mixed in well. Replace the flat beater with the dough hook. Gently increase the speed to 2. Knead for about 3 minutes. Vanilla Ice Cream with a KitchenAid

Vanilla Ice Cream Makes 1litre Ingredients 600ml full cream milk 600ml cream 1 Vanilla bean -split and scraped. 6 large egg yolks 2/3 cup (160g) castor sugar In a heavy based, non-stick saucepan, place the milk, cream and vanilla bean, stirring occasionally, until hot, without boiling. Remove the vanilla bean. Place egg yolks and sugar into mixer bowl and attach wire wipe, Mix on Speed 2 for 1 minute or until thick and pale. Slowly add milk mixture, stirring until well combined.
